Would a Heli Max speed controller work for planes just as well as any other controller or are they made specifically for the helicopter?

It might work on a plane, but as I understand it they are optimized for helicopters...

"This is the Heli-Max 25A Electronic Speed Control with Heatsink Brushless Motors. Specificaly designed for use with electric helicopters ( works well in constant high RPM ). It features High Efficiency, BEC (Battery Eliminator Circuitry) as well as low weight and compact size with anodized aluminum red heat sink. This ESC also has an Auto-detection of all types and number of cells. Over temperature protection turns motor OFF when temperature reaches 105 Celsius. Brake non-active/active setting allows for hard start or soft start modes. Universal radio connector for use with Futaba, JR, Hitec and Airtronics."

Also, I believe that some of the Heli ESCs have a governer mode to maintain rotor rpm at various pitch settings.

You might consider getting a regular controller if this is a fixed-wing application.  The Castle Thunderbird controllers are a nice cost-effective option - http://www.castlecreations.com/products/thunderbirds.html
